Sesame Oatmeal Cookies


This crunchy granola type cookie is from back in the crunchy granola days in the 1970's. You can use any kind of nut and raisins can be added if you like. Cover tightly or can be freeze.



1 cup flour
1 teaspoon cinnamon
1/2 teaspoon salt
3/4 teaspoon baking soda
1/4 teaspoon nutmeg
3/4 cup butter, room temp
1 1/3 cup packed brown sugar
2 eggs, room temp
1 teaspoon vanilla
1 1/4 cups sesame seed
1 1/4 cups cup pistachios, unsalted
1 1/4 cups cup regular or
instant rolled oats

Sift dry ingredients (first 5 items) together.
Cream butter with brown sugar and beat until creamy. Add eggs and vanilla, beating until blended. Gradually add dry ingredients, then add sesame seeds, nuts, and oatmeal.
Drop rounded tablespoonfuls of batter 2" apart (the dough will spread) on parchment or a greased cookie sheet. Bake at 350 until golden, about 12 minutes.
You can make yummy ice cream sandwiches with these cookies.
