Chicken with Potatoes


I think I heard this recipe on the radio many, many years ago. I remember grabbing a pencil and trying to get as much of it down then playing with it until I liked it. It's an excellent cool weather dinner.

This makes 4 hearty servings:

  • 8 chicken legs
  • 4 slices of bacon, cut in 1" pieces
  • 1 onion, chopped
  • 1 red pepper, chopped
  • 2 teaspoons paprika
  • 1 cup white wine
  • 4 small potatoes, red or Yukon gold, sliced
  • salt, to taste

In a large frying pan, cook bacon then remove from pan. Brown chicken legs in bacon fat and remove from pan. Brown onion and red pepper, then add paprika and wine to pan to deglaze.

Place chicken over vegetables in pan and sprinkle with bacon pieces. Toss potato slices over chicken. Cover pan and cook over low heat until done, about 45 minutes to 1 hour.
