Sherry Marinated Chicken

This is a quick and delicious dish that everyone likes.

This serves 4:

  • 2 whole skinless boneless chicken breasts, cut in bite-sized chunks
  • 2 tablespoons olive oil
  • 1 clove of garlic, minced
  • 1/4 cup minced onion
  • 1 teaspoon salt
  • freshly ground pepper to taste
  • 1 teaspoon oregano, dried
  • 1/2 teaspoon basil, dried
  • 1/4 teaspoon dried hot red pepper flakes
  • 1/2 cup dry Sherry
  • 3/4 pound of spaghetti or other pasta

Whisk together with a fork, olive oil, garlic, onion, salt, pepper, oregano, basil, red pepper flakes and Sherry. Put the chicken in a quart ziplock bag, pour in the marinade, close and let marinate for an hour or two.

Boil water and cook the spaghetti or other pasta al dente. Drain and return to pot to keep warm for a few minutes.In a saute pan, pour in the chicken and marinade and cook about 5 minutes or so over high heat until chicken is cooked through and the marinade is reduced to a sauce.

Serve chicken over the pasta, with a salad and good bread for dinner.
