Nan's Recipes: Rice Pilaff

Rice Pilaff


This is a good, simple way to make rice. I like it best with a little onion, but you can make it with other veggies. You can saute some little pieces of mushrooms, or red peppers and add in. Sometimes I dice a carrot and it makes a nice addition. This is excellent with fish, chicken, or any meat.

Serves 3 or 4:

  • 2 oz. thin spagetti, broken into short pieces
  • 1 cup rice
  • 1 small onion, chopped into small pieces
  • 2 tablespoons butter
  • 2 cups chicken stock or water plus a couple of bullion cubes
  • salt, to taste, about 1 teaspoon

Saute onions in butter. Add rice and spagetti, and saute about 5 minutes until lightly browned.

Add stock (or water and bullion cubes) and bring to a boil.

Cover and simmer over very low flame until done, about 15 minutes. Let rest 10 minutes before serving.
