Roasted Potato Wedges


Forget greasy French fries! These are much tastier, no frying is involved, and they're very easy to make. The only problem is that I can't sto eating them!

This makes 2 or 3 servings, depending on who's coming for dinner:

  • 3 large baking potatoes
  • 1 tablespoon butter
  • 2 tablespoon olive oil
  • salt, paprika, and pepper to taste

Heat the oven to 350. Scrub potatoes. Cut each lengthwise into 8 wedges.

Heat the butter and oil in a jelly roll pan. Add the potatoes, toss to coat, then sprinkle with salt, paprika, and pepper.

Bake until tender and browned, occasionally turning, about 1/2 hour to 45 minutes.
