Tomato Salad

This recipe is the essence of summer. You need really good tomatoes or it's not worth making. Eat this from a bowl with a spoon to get all the juices, or use a chunk of good fresh bread to soak them up. You can also toss it over fresh cooked pasta and add a few olives if you like. YUM!

For each person, use:

  • 1 good sized, perfectly ripe tomato, or a few smaller ones
  • an ounce or so of mozzarella, preferably fresh
  • 4 big basil leaves
  • 2 teaspoons extra virgin olive oil
  • 2 teaspoons balsamic vinegar
  • a dash or two of hot sauce (Melinda's is good, tabasco, whatever)
  • salt, to taste

Cube the tomato to bite sized chunks.

Do the same to the mozzarella and add to the tomato.

Shred the basil leaves and toss in with the tomato.

Sprinkle with olive oil, vinegar, and hot sauce. Let sit an hour or two at room temperature if you can, so the flavors blend.
